Quoted by Vegas’s industry powerhouses as a “Local Luminary,” Peter Vitolo has spent the last 20 years dedicating himself to educating others with his passion for beverage innovations. He is the guy at the party talking about the newest drinks being served around the world, he is the one filling bubbles with vapor creating memorable immersive cocktail experiences. He is plain and simple, entertaining.
His beverage education got its beginnings in New York City’s Soho district working with BRGuest. Peter quickly became an artist in his profession certifying himself in bar culture and specializing in Italian wines.
After bringing his talents to Las Vegas and being branded Mixologist and Beverage Specialist, it took Peter no time to find his niche amongst beverage leaders in the industry. Deciding to expand his horizons he has since been recruited to assist in the opening of bar/restaurants spanning from under the Caesars Palace umbrella, with acclaimed chef Alex Stratta, moving up to Lake Tahoe to helm the food and beverage department at the Hard Rock Hotel & Casino, then coming back to Las Vegas to take on the role as Beverage Director for Station casinos flagship property Red Rock and recently bringing his talents to assist world-renowned chef Enrique Olvera in opening his first-ever property at Wynn Las Vegas while starting his own bar consulting and creative director business, 4peteshake Hospitality.
Currently, he is the Beverage Specialist for ITM – In the Moment, a hospitality development and management group, whose role is to build, oversee and enhance innovative projects with a focus to deliver “best in class” lifestyle and hospitality projects to markets that yearn for cutting-edge experiences and has helped them grow by adding his expertise and experience in the industry.
As part of his growing passion for the industry, Peter has worked hard to curate and implement cutting-edge beverage programs and training protocols throughout various food and beverage establishments within the Las Vegas Metropolitan area. He further continues to demonstrate a specialty in Food & Beverage analytics by assisting his clients in maximizing their profitability across the board. He has earned multiple accolades and awards, including certified mixologist, 1st level sommelier, Italian wine specialist, Cicerone along with Servesafe manager and Southern Nevada Health Department Covid protocol leadership].
Peter currently resides in Las Vegas with his wife and young son. When he isn’t working hard with his ITM partners, you’ll find him grinding in the dirt with his mountain bike.
